How about Pronto Taco soup?1 lb. ground beef1 onionsome garlic1 can of tomatoes, diced and drained1 can of tomatoes, peeled and stewed, then put in food processor w/ hot a little hot sauce or jalepeno2 cans beef broth1 cup unccoked whole wheat pasta shells1 medium green pepper, chopped2 tsp chili powder1 can black beansCook beef, onion, and garlic.In pot, combine everything and bring to boil, then crockpot for a few hours. I'm not sure if I add the beans in early. Can't remember. When ready to serve, you can add cheese or sour cream to your individual bowl. Of course, you can attempt to make this as organic/healthy/less packaged as possible, but it's an idea.
You can always freeze it :) Seriously, divide it into 1/4 lb. segments & then you can make up a hamburger or whatever if it's ever necessary.
