Taking Suggestions

What do I do with a pound of ground beef?

This will be in my share this evening, and I have no clue what to do with it. I need something where the beef isn't super noticeable (no burgers, no tacos, and no meatloaf).

Ideas?

How about Pronto Taco soup?

1 lb. ground beef
1 onion
some garlic
1 can of tomatoes, diced and drained
1 can of tomatoes, peeled and stewed, then put in food processor w/ hot a little hot sauce or jalepeno
2 cans beef broth
1 cup unccoked whole wheat pasta shells
1 medium green pepper, chopped
2 tsp chili powder
1 can black beans

Cook beef, onion, and garlic.
In pot, combine everything and bring to boil, then crockpot for a few hours. I'm not sure if I add the beans in early. Can't remember. When ready to serve, you can add cheese or sour cream to your individual bowl.

Of course, you can attempt to make this as organic/healthy/less packaged as possible, but it's an idea.

You can always freeze it :) Seriously, divide it into 1/4 lb. segments & then you can make up a hamburger or whatever if it's ever necessary.
